If you’ve been on Pinterest lately, you’ve probably seen that overnight oats are everywhere. And while we’re skeptical of fads, this trendy breakfast is here to stay. Take this recipe for overnight oats with banana and peanut butter. All you have to do is prep it the night before (in a mason jar, duh) and in the morning—voilà—healthy, delicious breakfast is served.

Makes 1 serving
Prep: 5 minutes; Chilling time: 8 hours

Ingredients

Oats

¾ cup old-fashioned oats

½ banana

2 tablespoons peanut butter

1 tablespoon honey

½ to ¾ cup milk (such as whole, skim, almond, soy or coconut)

Toppings

½ banana, sliced

2 tablespoons peanut butter

Directions

1. Pour the oats into a 1-pint mason jar.

2. In a small bowl, mash half of the banana with a fork. Add the peanut butter and the honey and mix to combine.

3. Add the milk to the jar with the oats. (If you prefer a thicker oatmeal, use less milk.)

4. Screw on the lid and refrigerate overnight, about 8 hours.

5. In the morning, top the oatmeal with the peanut butter mixture and banana slices. Eat immediately or screw the top on and take it on the go.
