Carrot Cake with Hemp Hearts
Sometimes you just want to make your go-to sweet treats that little bit healthier and more nutritious.
Hemp hearts in recipes such as this delicious carrot cake, made by Fay, our HempFarm accounts lady, is always a favourite in the office.
We hope you’ll enjoy it as much as we do!
1 cup wholemeal flour
1 cup plain flour
1.5 cup brown sugar
2 t baking soda
2 t cinnamon
½ t nutmeg
½ t allspice
½ t salt
1 cup oil e.g. rice bran
3 eggs lightly beaten
2 t vanilla essence
3 cups grated carrot
1 x 425gm tin crushed pineapple, drained
1 cup chopped walnuts
½ cup hemp hearts
½ cup desiccated coconut
1 cup raisins (optional)
Preheat oven to 180C , grease a round tin.
Sift together flour, sugar, remaining dry ingredients, etc in a large bowl.
Add eggs, carrots, pineapple, oil and essence then fold in remaining dry ingredients.
Pour into tin and bake for approx. 1 hour. Once cool, top with cream cheese icing and decorate with pumpkin seeds, hemp seeds, edible flowers etc.
